I am catching up on posts that I didn't get to while still living in Vienna!
A while back, I made a very similar
recipe with sun-dried tomatoes and pesto. This time, I added roasted red peppers and spinach, sauteed in garlic, along with a tofu ricotta base. To save time, the tomato sauce is store bought. This meal is an extremely simple way to make something comparable to lasagna, it is very filling, and versatile because of the many flavors that can be added to the tofu ricotta base.
