I asked John what he wanted for dinner this week and Fajitas were number one, which is excellent because they are very easy! I followed this
recipe, minus the corn and black beans (I completely forgot to add them), plus mushrooms. We loaded flour tortillas with the veggies, guacamole, and
Frontera Salsa (currently addicted to!) And, an added bonus! There are TONS of leftover veggies that will make a delicious tofu scramble tomorrow morning.
