I remember making these a long time ago, way before I became a vegan. I was searching for a
recipe for bananas that were getting really ripe and had deja vu finding this recipe again! Vegan butter and eggs are the only needed substitutes for the cookies. You can frost them, if you want them to be sweeter, but they have a fantastic flavor by themselves. They are like little bites of soft, slightly fluffier/doughy-er banana bread.
